Overnight Rolls

4 cups warm water
1 tbsp dry yeast
1 cup sugar
1 tbsp salt
1 cup oil
1 egg
12 cups flour

6:00 pm: Mix together well. Do not knead dough – it may be sticky. 8:00pm: Punch down dough.
10:00pm: Put in pans (makes 48 large buns)
Cover & let rise overnight.
In morning, bake 25 min @ 350.

Pizza &/ Or Garlic Finger Dough

3 cups flour
¼ cup sugar
1 ½ tsp salt
1 tbsp instant yeast
Mix dry ingredients together.

Add:
2 ½ cups warm water
¼ cup oil
Mix and add enough flour to make a dough, about 2-3 cups. Knead flour into dough. Dough should be slightly sticky, not too dry. Cover & let rise until double (1-2 hours) Press onto greased baking sheets – makes 2 large pans. Let rise again (1 hour).

For garlic fingers: Brush with garlic butter & top with grated cheese – the more, the better! Bake 7-10 min @ 450.

Garlic Butter:
1/3 cup butter or margarine
1-3 crushed fresh garlic cloves
1 tsp oregano, basil &/or Italian seasoning.

For pizza: cover with tomato sauce and favourite toppings. Use lots of cheese.
Bake 10-12 min, or until crust is lightly browned on bottom, @ 450. May need to turn on broil for a few minutes to lightly brown cheese.

Sticky Buns

Mix roll recipe & let rise. Make sticky bun sauce.

Sauce:
4 cups brown sugar
¼ cup canned milk (try sour cream)
½ cup water
½ cup margarine
1 tsp vanilla
1 ½ tsp cinnamon
Combine ingredients. Heat in microwave until butter melts. Mix.

Divide dough in 2. Roll out piece of dough to approx 24”x15”. Put ¼” of sauce in bottom of 9”x13” pan. (recipe makes 2+ pans). Spread some of sauce thinly over dough. Roll up (24” long). Cut into ½”-¾” slices. Arrange in pan. Repeat with other ½ of dough. Let rise covered as usual. Bake 20-30min @ 350.

Taco Shells

5 cups flour
¼ cup sugar
1 ½ tsp salt
2/3 cup oil
2 cups water
Mix & knead. Divide into 24 balls. Roll out (use lots of flour). Fry over medium heat just until brown spots begin to appear. Watch carefully!

Air Buns

1 cup warm water
2 tsp sugar
2 tbsp yeast
Dissolve together in large bowl. Let stand 10 min then add:

3 cups warm water
½ cup sugar
½ cup oil
2 tsp salt
2 tsp vanilla
8-10 cups flour

Beat in as much four as possible. Knead in remainder. Knead 10 min. Let rise 1 hour. Make into buns – 3-4 dozen. Let rise 1 ½ hours. Bake 12-15 min @ 400.
