Chicken & Broccoli Casserole

2 cups cooked chicken cut in bite sized pieces
1 large head broccoli – cut in bite sized pieces, partially cooked & drained
Spread chicken & broccoli in 9×13 pan.

2 cans cream of chicken soup
½ cup miracle whip
1 tsp curry powder
1 tbsp lemon juice
Combine to make sauce. Pour over top of chicken & broccoli.

Top with:
2 cups grated mozzarella cheese

Bake 30 min @ 350. Serve with rice.

Hawaiian Beans

1 lb hamburg
1 onion
1-7 oz can tomato sauce or tomatoe soup
2 cans yellow eye beans or
1 can yellow eye & 1 can kidney
1 can crushed pineapple
2 tbsp vinegar
3 tbsp brown sugar

Brown meat & onions. Add other ingredients. Bake in casserole @ 350 until done.

Seven Layer Dinner

Layer of sliced potatoes
Layer of sliced carrots
Layer of thinly sliced onions
¼ cup uncooked rice
1 can peas & juice
1 lb hamburg
1 can tomato soup & a can of water

Bake in slow oven (325) 2 ½-3 hours. Cover except for last ½ hour.

Meat Pie

1 lb bacon
1-2 chopped onions

Fry together in large pot, then arrange on top of bacon:
Carrots, sliced
Potatoes, sliced
Pour liquid from large can of peas over top. Add salt & pepper to taste. Cook until almost done. Add peas & continue cooking until done.

Chili Con Carne

1 lb hamburg browned & drained
1 onion chopped – sautéed
Large can of tomatoes
2 cans kidney beans
3 tsp chili powder
1 tsp salt & oregano
Simmer until well cooked.

Cheeseburger Casserole

1 lb lean ground beef
1 chopped onion

Brown together, then add:
1 can tomato soup
¾ can water
½ cup ketchup
1 tsp salt
2 tsp onion powder
¼ tsp pepper
3 cups cooked rice
½ cup grated cheese for top

Bake 350 oven until cheese melts.

Rice Casserole

2 cups uncooked rice
1 pkg onion soup mix
1 chopped green pepper
2 stalks celery, chopped
1 can mushrooms, drained
¼ cup oil
¼ cup soya sauce
4 cups boiling water

Mix & put in casserole dish. Bake 1 hour @ 350.

*Can reduce bake time by starting casserole in microwave for 10 min.

Easy Scalloped Chicken

1 cup water
½ cup chopped celery
1 slice onion chopped
2 chicken bouillon cubes
½ tsp salt
1/8 tsp poultry seasoning

Simmer together 5 min, then add:
1 ½ cups milk

Make a paste with:
2 tbsp flour
2 tbsp milk
Add to above & cook until thick.
Then add:

1 cup cooked chicken, diced

6 or 7 slices of bread toasted
1 tbsp parsley

Spread toast with butter & cut into cubes to make 2 ½ cups. Sprinkle ½ into a greased casserole dish. Add chicken mixture & parsley. Spread remaining toast cubes on top. Press lightly. Bake 30 min @ 375.

Tortilla Beef Bake

1 ½ lb. ground beef
1 can cream of chicken soup, undiluted
2 ½ cups crushed tortilla chips, divided
1-500ml jar salsa
1 ½ cups grated cheddar cheese

Cook ground beef & drain. Stir in soup. Sprinkle 1½ cups crushed tortilla chips in greased, shallow casserole dish. Top with beef mixture, salsa & cheese. Bake uncovered 25-30 min @ 350. Sprinkle with remaining chips. Bake 3 min longer or until chips are lightly toasted.

* Can also be made with cooked chicken &/or with torn tortilla shells instead of corn chips.

Super Sloppy Joes

2 lbs ground beef
½ cup chopped onion
2 stalks celery, chopped
¼ cup chopped green pepper
1 large can chopped tomatoes
¼ cup ketchup
2 tbsp brown sugar
1 tbsp vinegar
1 tbsp Worcestershire sauce
1 tbsp steak sauce
½ tsp garlic powder
¼ tsp dry mustard
¼ tsp paprika
8-10 hamburger buns, split

Brown hamburg with vegetables until meat is cooked & vegetables are tender. Drain any fat. Add remaining ingredients. Simmer 35-40 min, stirring occasionally. Spoon ½ cup meat mixture on each bun.
