Pina Colada Muffins

In large bowl, beat until well blended:
½ cup sugar
1 egg
¼ cup sour cream
1 tsp rum extract
¼ cup margarine
Sift together:

1 ½ cup flour
1 tsp baking powder
½ tsp soda
½ tsp salt

Add dry ingredients to bowl, stirring just until blended. Stir in:
½ cup coconut
1 small can (14oz)crushed pineapple, drained

Bake 20 min @ 375.

Zucchini Muffins

3 eggs – Beat until foamy
Add remaining ingredients:
1 cup oil
2 cups grated zucchini
3 cups flour
1 tsp soda
¼ tsp baking powder
2 cups sugar
1 tsp cinnamon
1 tsp vanilla
1 tsp salt

Bake 30 min @ 350. (For zucchini bread, bake 60 min)

Fresh Apple Muffins

Mix together & let stand:
1 cup finely chopped apples
¼ cup sugar

Mix together:
1 ¾ cups flour
¼ cup sugar
4 tsp baking powder
½ tsp salt
½ tsp cinnamon

Combine liquid ingredients:
1 cup milk
¼ cup oil
1 egg

Beat slightly & add to apple mixture. Add to dry ingredients. Stir just until moistened. Fill greased muffin tins & sprinkle with topping.

Topping:
½ cup chopped nuts
¼ cup sugar
1 ½ tbsp flour
½ tsp cinnamon
¼ tsp nutmeg
1 tbsp soft butter.

Bake 20-25 min @ 400.

Carrot Bran Muffins

In large bowl, mix together:
2 egg, beaten
½ cup oil
1 cup grated carrot
1 cup crushed pineapple & juice

Sift together:
1 ½ cup flour
¾ cup brown sugar
¾ cup natural bran
1 tsp baking powder
1 tsp soda
½ tsp salt
1 tsp cinnamon Stir to moisten. Fill greased muffin tins 2/3 full. Bake 20-25 min @ 400.

Chocolate Zucchini Muffins

Combine in small bowl:
2 cups flour
3 tbsp cocoa
2 tsp soda
2 tsp cinnamon
½ tsp salt

Mix in large bowl:
3 eggs
1 cup oil
2 cups sugar

Stir in & mix well:
2 cups grated zucchini
3 tsp vanilla
1 cup chopped nuts

Gradually add dry ingredients to batter, mixing well after each addition. Stir in nuts & combine well.

For muffins, bake 30 min @ 350. -or- Makes 2 loaves, bake 60 min.

Apple Muffins

Mix together:
2 cups flour
¾ cups sugar
3 tsp baking powder
¼ tsp soda
1 tsp cinnamon
¼ tsp nutmeg
½ tsp salt

Beat together & then add to above
½ cup milk
¼ cup oil
2 eggs

Add:
1 ½ cups finely chopped apple

Sprinkle with:
¼ cup sugar & ½ tsp cinnamon

Bake 20 min @ 400.

Pumpkin Muffins

Beat thoroughly together in large bowl:
4 eggs, beaten
2 cups sugar
1 ½ cups oil
1 ¾ cups pumpkin

Sift together:
3 cups flour
1 tbsp cinnamon
2 tsp baking powder
2 tsp soda
1 tsp salt
Add to above mixture. Mix until smooth, then add:
2 cups raisins
Bake 25-20 min @ 375.

Sugar & Spice Muffins

Mix together:
1 ¾ cups flour
1 ½ tsp baking powder
½ tsp salt
½ tsp nutmeg

Beat together & then add to dry ingredients:
1/3 cup oil
¾ cup sugar
1 egg
¾ cup milk

Topping:
1/3 cup melted butter
Mix together in small bowl:
¾ cup sugar (or 1/3 cup brown sugar)
1 tsp cinnamon

Fill muffin tins 1/3 full. Bake 15 min @ 350. When baked remove immediately from pans & dip in melted butter. While still hot dip in cinnamon sugar. Makes 1 dozen approx ¼ cup of batter each.

Cornmeal Muffins

1 cup flour
2 ½ tsp baking powder
¼ tsp soda
½ tsp salt
¼ cup sugar
½ cup cornmeal
1 egg beaten
¼ cup oil
¼ cup honey
1 cup milk

Bake 20 min @ 400

Best Ever Banana Muffins

3 large bananas
¾ cup sugar
1 egg, slightly beaten
1 tsp soda
1 tsp baking powder
½ tsp salt
1 ½ cups flour
1/3 cup melted butter

Mash bananas. Add sugar, egg & melted butter. Add dry ingredients.

Bake 20 min @ 375.
