3 tbsp margarine
1 large onion, sliced
½ cup thinly sliced carrot
½ cup diced celery
1 clove garlic, crushed

Sautee. Add:
4 cups diced potatoes
2 cups chicken stock
1 ½ tsp salt
¼ tsp pepper
1 tsp parsley

Boil & simmer until vegetables are cooked. Stir in:

2 cups milk
Heat & garnish with grated cheese.
