Scalloped Salmon

Make white sauce with:
4 tbsp flour
4 tbsp butter
2 cups milk

Place in layers in casserole dish:
1 large can salmon, flaked
6 cooked potatoes, sliced
Sauce

Top with bread crumbs & butter. Bake in hot oven until bubbly. Peas & minced onion may be added.

Scallop Casserole

2 lbs scallops (if frozen – partially thaw) Put in dish. Cover with cold water. Heat, but do not boil. Steam 15 min.
6 hard boiled eggs, chopped

Sauce:
1 cup white sauce
1 can cream of chicken soup
¼ – ½ cup grated cheese
Green pepper, chopped
Celery, chopped

Butter casserole dish & put in scallops. Sprinkle eggs over top.
Top with sauce, then toasted bread crumbs & dot with butter. Bake 1 hr @ 350.

Seafood Casserole

¼ cup butter
¾ cup flour
4 cups milk
Salt to taste
Melt butter, add flour & salt. Blend together, then add milk gradually, stirring constantly. Cook until thick. Add:

2 tsp tomatoe paste
1 tsp lemon juice
2 tsp Worcestershire sauce
1 can mushrooms, fried in butter (or fresh)

Add: ½ lb cooked scallops (sautéed or boiled)
1 cold pack lobster, thawed & with juice. Boil 5 min. Put in casserole dish. Grate cheese on top & broil until brown.

Salmon Soufflé

3 tbsp butter
3 tbsp flour
1 cup milk
2 eggs (yolks first, add whites last)
½ tsp salt
1 small can salmon
Pinch cayenne

Mix butter, flour & milk to make sauce. Move to back of stove. Add yolks & salmon. When a little cool, add beaten whites. Bake 45 min @ 375.

Salt Cod Hash

½ lb boneless salt cod
2 ½ cup raw potato cubed
1 tsp chopped onion
Boiling water – soak cod overnight. Drain & add fresh water. Bring to simmer. Drain. Add potato & onion, cover with water. Cook & drain. Mash. Add:

1 tbsp butter
1 egg beaten
Pepper
¼ cup chopped parsley
Mash until smooth.

4 slices bacon – cut up & fried
Remove. Save 2 tbsp fat in pan & heat. Add cod & spread evenly. Cook slow until crisp & brown. Sprinkle with bacon. Fold in half & serve.

Fish Pie

4 tbsp butter
1 large onion chopped
Sautee onion in butter. Add:
4 tbsp flour
Salt & pepper
4 cups milk
Add:
1 lb cooked cod
4-5 hard boiled eggs chopped
Top with mashed potatoes . Dot with butter. Bake in oven until brown.

Salmon Loaf

Mix together in bowl:
1 large or 2 small cans salmon, drained, deboned & flaked
2 cups soft bread crumbs
1 tbsp minced onion
1 tbsp butter, melted
½ tsp salt

Combine:
½ cup milk
1 slightly beaten egg
Add to salmon mixture, mix thoroughly. Shape into a loaf on a greased baking sheet (Or use a loaf pan). Bake 35-40 min @ 350.

Serve with a white sauce with minced onion, dry mustard & Worcestershire sauce added.
