Raisin Oatmeal Bread

1 cup flour
1 tsp baking powder
1 tsp soda
1 tsp salt
1 cup flour
1 cup oatmeal
¼ cup sugar
½ cup molasses
1 ¼ cup buttermilk
1 cup raisins

Mix dry ingredients well. Add molasses & buttermilk. Beat until smooth. Stir in raisins. Bake 50 min @ 350.
Serve sliced & buttered. Good for breakfast.

Honey-Wheat Loaf

1 tbsp dry yeast
2 ½ cups warm water
¼ cup honey
Mix together and set aside for 10 min. Add:

3 tbsp oil
Mix dry ingredients in large bowl:

6 cups whole wheat flour (or 3 white & 3 whole wheat)
1 tsp cinnamon
¼ cup sesame seeds
1 tsp salt

Add liquid ingredients. Knead until smooth, cover & let rise until double (1 hour). Punch down & form into loaves (2?) or into Santa head. Let rise again until double (1 hour).

Bake loaves 30 min @ 350.. Brush with 2 tbsp honey & return to oven for 5-10 min to set glaze.

White Bread

2 tbsp yeast
2 tsp sugar
1 cup warm water

Dissolve yeast in sugar & water. Let set 10 min. While waiting, mix in large bowl:

2 tbsp shortening
¼ cup sugar
2 tbsp salt
2 cups scalded milk

Mix until shortening melts. Add:

2 cups water

Add yeast mixture. Mix well & then add:

6 cups of flour. Stir. Add:

5-6 cups flour

Mix to make dough. Knead 10 min. Let rise until double (2 hours). Punch down. Shape into 4 loaves. Put in greased bread pans. Let rise until double (1 ½ hours).

Bake 30 min @ 350.

Brown Bread

1 pkg yeast
½ cup warm water
1 tsp sugar

Dissolve sugar in water. Sprinkle in yeast. Let set 10 min.

2 cups (heaping) rolled oats
2 tsp salt
3 tsp shortening
½ cup molasses
3 cup boiling water

Pour boiling water over other ingredients. When lukewarm stir in yeast mixture. Add:

6 cups flour

Spoon in flour to make a stiff (but not dry) dough. Mix in bowl. Do not knead. Dough will be sticky.

Cover & let rise until double (2 hours). Put in pans & let rise again (2 hours).

Bake 1 hour @ 375 – heat may need to be reduced to 350 for last 30 min.

Multi Grain Bread

2 cups water
¾ cup multi grain cereal (Red River)
Bring to a boil & simmer 5 min. Stir in:

1 tbsp butter
1/3 cup molasses
2 tsp salt
Let cool.

1 tsp sugar
½ cup warm water
1 pkg yeast
Dissolve sugar in water. Sprinkle in yeast & let stand 10 min. Beat in enough flour to make stiff dough. – Approx 4 ½ cups flour.

Turn out dough & knead until smooth (about 10 min). Turn into greased bowl & grease all over. Cover & let rise 1- 1 ½ hours. Punch down, knead & let rise 10 min. Put into pans. Cover & let rise about 1 hour. Bake 30-35 min @ 375.

Double recipe makes 3 large loaves. For double recipe, do not double salt. Bob adds ½ cup brown sugar to a double recipe.

Bread

1 cup oatmeal
1 cup Red River cereal
½ + cup brown sugar
Add 1 kettle (+) boiling water. Stir & let cool. Add:
2 tbsp salt
3 tbsp yeast
Flour – to make mixture creamy

Beat together & let rise 1 hour.

Add enough flour to make dough. Knead well. Let rise again. Punch down. Use flour on hands & on board to form loaves. Let rise in pans. Bake @ 350.

Pizza Dough

1 ½ cups warm water
2 tbsp sugar
1 pkg yeast
Mix together & let yeast rise.
Whisk in:
2 eggs
4 tbsp oil
1 tsp salt
Add:
4 cups flour
Knead.
Put dough in covered bowl in oven with light on for ½-1 hour. Makes 3 round pizzas. Knead in a little flour if sticky. Oil pans & stretch dough to fit. Add toppings. Let sit at least 15 min. before baking. Bake @ 450.

Easy French Bread

3 cups warm water
1 tsp dry yeast
Let rise 15 min then add:
2 tsp salt
6 cups flour (part whole wheat – 2cups)
Mix with spoon, then with hands. The dough will be very soft. Cover with damp cloth & let rise overnight. In the morning form 3 French loaves & place on greased cookie sheets. Let rise again until noon. Bake 20 min @ 400, raising oven temperature to 425 for the last 5 min to brown.

Bran/Whole Wheat Bread

1/3 (1 1/3) cup bran
¾ (3) cup whole wheat flour
1 (4) cup flour
¼ (1) cup brown sugar
1 ½ tsp (2 tbsp) yeast
1 tsp (1 tbsp) salt
7/8 (3 ½)cup milk
1 tbsp (¼ cup) oil

Recipe makes one loaf. Quantities in brackets are for 4 loaves.

Mix dough & let rise in warm oven 30-60 min. Make into loaves. Place in greased bread pans. Let rise 1-1 ½ hours. Bake 30 min @ 350.

Two Hour Buns

Mix together in large bowl:
2 tbsp instant yeast
4 cups flour
Whip together:
2 eggs
½ cup sugar
1/3 cup oil
3 cups hot water
Mix into yeast mixture. Beat 3-5 min. Add:
1 tsp salt
3-4 cups flour

Let stand 15 min. Punch down & let rise 15 more min. Form into buns (makes 48). Let rise until double (1+ hours). Bake 15 min @ 350.
