In large bowl, beat until well blended:
½ cup sugar
1 egg
¼ cup sour cream
1 tsp rum extract
¼ cup margarine
Sift together:
1 ½ cup flour
1 tsp baking powder
½ tsp soda
½ tsp salt
Add dry ingredients to bowl, stirring just until blended. Stir in:
½ cup coconut
1 small can (14oz)crushed pineapple, drained
Bake 20 min @ 375.
